1 pinch of sugar
1 tablespoon lemon juice

For the sauce:
4 hard boiled eggs
2 raw egg yolks
Two decimal liters of olive oil, extra virgin
One decimal liter wine vinegar
1 ½ tsp Dijon mustard
2 teaspoons capers
4 tablespoons red wine

1 bunch parsley
a little chervil
Peel the asparagus
from the tip downwards.
