1 kg white asparagus
1 pinch of sugar
1 tablespoon lemon juice
a little salt

For the sauce:

4 hard boiled eggs
2 raw egg yolks
Two decimal liters of olive oil, extra virgin
One decimal liter wine vinegar
1 ½ tsp Dijon mustard
2 teaspoons capers
4 tablespoons red wine
a little salt
a little freshly ground black pepper
1 bunch parsley
a little chervil
