4 anchovy fillets in oil
30 gram parsley
2 cloves of garlic
400g ripe tomatoes or canned tomatoes
3 tablespoons extra virgin olive oil
1 fresh chilli

2 tablespoons capers
4-6 basil leaves

Spaghetti Tuna

Remove the tuna loosely apart with a fork.
Rinse the fillets under cold running water and pat dry.
Wash the parsley, sling it dry and chop finely.
Peel the garlic cloves and cut into thin slices.
Peel the fresh tomatoes briefly in boiling water to do, cut them in half and remove the seeds.
Cut the tomatoes into cubes.
Heat the oil in a heavy pan.
Add the garlic and the whole chilli and let them sweat.
Mash the anchovy fillets with a fork, add to the pan and stir everything together.
Add the tomatoes and chopped parsley.
Season with salt put the lid on the pan and let simmer 10 to 15 minutes over medium heat.
Bring the meantime a large pot of salted water with a dash of oil to boil add the pasta and cook until al dente.
Spoon tuna and capers into the sauce while the pasta cooks.
Dilute the sauce if necessary with some of the pasta cooking water and then simmer for about 5 minutes.
Then remove the chilli.
Drain the spaghetti and add then to the sauce.
Stir everything around and around and put it in a preheated bowl.
Garnish with basil leaves and drizzle with some olive oil if desired before serving it.
