4 fairly thick Entrecote
a little salt
a little pepper
a little oil
4 tomatoes

the marinade:
4-5 tablespoons oil
1 teaspoon spicy mustard
½ teaspoon pepper
1 teaspoon crumbled thyme or rosemary
1 crushed clove of garlic

for the herb butter:
100 g soft butter
1 clove of garlic
1 pinch white pepper
4 tablespoons finely chopped mixed herbs (parsley, tarragon, chervil and chives)

Beat the Entrecote slightly flatter with a flat hand.
