FISH IN TAUCO SAUCE ala MEDAN-WEST SUMATERA, INDONESIA.The receipe is as following:
- 500 grams fish/2 large fish (see note of fish variety)
- 1/2 peeled brown onion (you may subtitute with leek, sliced)
- 3 red cayenne chilli (dispose its seeds, slice long and thin)
- 2 table spoon sugar
- 5 table spoon Tauco sauce (see note for explanation)
- 1 Bay Leaf
- 1 Lemon grass (take white part only & punch rough)
- 1 glass of water

INDGREDIENT FOR MARINATING:
- 4 table spoon lemon juice
- 3 cm fresh turmeric (peeled)
- 3 garlic
- 1 tea spoon salt
* Grind on stone plate or fine Garlic+Turmeric+salt using blender, then add lemon juice, mix and apply all over the fish. Let it 30 minutes. Deep fry the fish after that. Make sure the fish is smooth and clean from indgredients that has just applied BEFORE frying it.

INDGREDIENTS FOR SAUCE (grind on stone plate or using food processor/blender)
- 3 garlic
- 5 eshalot
- 2 cm ginger
- 1/4 tea spoon salt

HOW TO COOK these tastiest recipes:
(1) Heat 2 table spoon cooking oil, add sauce indgredients+ brown onion (if you use it), stir awhile until the fragrance emerging then add the bay leaf and lemon grass, stir and add water, mix.

(2) Add sugar + Tauco sauce, stir awhile and add the fish, let it boil at low/small fire for about 5 minutes. Get a clean plate, lift the fish with its sauce and it's ready to serve ^^

NOTE:
- It's better you use fresh water fish such as: Gurameh, Tilapia, Cat fish or Milk fish
- if you use leek slice, add it at the end of cooking session
- Tauco is Indonesia fermented soy bean sauce, a close relative of "Douchi" china (Fermented Black Soy Bean Paste). Be careful if adding more salt if using this sauce, because it has a high salt content (around 15%) that somehow taste between sweet, sour and salty! :)
